Alu aur Baingan

INGREDIENTS :

2 Cups Baingan (Brinjal) cubed
2 Cups Alu (Potatoes) boiled and cubed
1 Cup Onions Chopped
1 Cup Tomatoes Chopped
"½ Cup Roasted Groundnuts
1 tsp Ginger Paste
1 tsp Chili Paste
1 tsp Jeera (Cumin seeds)
"½ tsp Haldi (Turmeric powder)
3 tbsp Oil
1 tsp Sugar
1 tsp Garam Masala
Oil for deep frying
Salt to taste



METHOD :

alu-aur-baiganAdd Salt and Haldi to Baingan cubes and keep aside for 20 minutes. Deep fry the Baingan cubes and remove on a papar towel and keep aside.

For Gravy :
Heat oil, add Jeera and Onions, fry till golden brown. Add Ginger and Chili paste and fry. Add Haldi and Sugar and mix well. Add chopped tomatoes, "½ cup roasted groundnuts, salt and Alu mix well. Now add the fried baingan and mix well, after a minute add a cup of water and Garam Masala and mix well. Close the lid and cook for 7 to 8 minutes and serve.
